I don't have a lot of experience with Japanese Cuisine but soba noodles are my favorite out of all of them. They have a flavor I can't seem to find in other noodles.

I consider udon and ramen to be equals, but i measure this as traditional ramen in soup being equally tasty to yaki udon. Idk if ive had udon prepared like ramen but i know i like the chew of some nice stir fried udon
Also i agree that melonpan isn't that good. I greatly prefer chinese pineapple buns which are close to the same but the bread is more soft like a brioche and the top is like a delicious New York kosher bakery style cookie, specifically these tricolor sugar cookies at this kosher bakery near my house

As a person with a HEAVY bias in favor of thin noodles (my favorite pasta is angel hair and I do like somen) I would like to try this cheese broth udon you speak of.
I've only had udon once and the the broth it came in didn't do it any favors

I actually really like takoyaki mainly because of the sauce, but I also like octopus. I actually had some a few minutes go.
