As nice as this is, there are things I noticed you missed.
There is an inside to the nether fortress. It is not just towers and bridges -- that's only the outer half portion. There's inside stuff as well. (Seriously, they look like they have two parts, and there's a room that joins the buildings with an inside to the towers and catwalks of the outside.
The woodland mansions also have a ton of rooms with decorations.
Other than that: Congrats on being able to afford such a large collection of bricks, and on having a place to keep all of them. Do you keep your constructs around for years to come? (I was told Acetone does a good job of melting the bricks just enough to keep them intact -- apparently you q-tip the acetone around the outside?)

Can you make a sorta part 2 where you make the fields, places like swamps and mangrove swaps, normal fields, flower fields, stuff like that. It would be cool! And then at the end of video you can make all structure and field sets combined and make an giant Minecraft world!
